These are the recipes for the desserts that have been served at our luncheons.
Mandarin Orange Dessert 1 orange cake mix 4 eggs 3/4 c. oil 1 - 15 oz can mandarin oranges (drain and reserve 1/2 c juice) Beat the first ingredients and reserve juice in a bowl until well combined. Pour into a lightly greased and floured 9x13 pan. Place mandarin oranges evenly on the batter. Bake at 350 degrees for 30-40 minutes.
So Easy Cherry-Fudge Cake (February 2016) 1 (18.25 oz) Devil's Food Cake Mix 1 (21 oz) can of cherry pie filling 2 large eggs 1 teaspoon almond extract 1 cup sugar 1/3 cup milk 5 tablespoons butter 1 cup semi sweet chocolate morsels Preheat oven to 350 degrees. Beat first 4 ingredients at low speed with electric beater for 20 seconds. Increase speed to medium and beat 1 more minutes. Pour batter into a greased and floured 13 x 9 inch pan. Bake at 350 for 27-30 minutes, until wooden pick inserted in center comes out clean. Cool for 10 minutes. Bring sugar, milk and butter to a boil over medium heat, stirring occasionally. Boil 1 minute. Remove from heat, stir in chocolate morsels until melted and smooth. Quickly spread over warm cake. Cool completely.
Lemon Sponge Dessert (January 2016) 1 box Angel Food Cake Mix 1 can lemon pie filling (Comstock's Lemon Creme) Mix cake mix and pie filling. Grease bottom of 9x13 pan. Bake at 350 for 35 minutes.
Apple Spice Dessert (November 2015) Two 21 ounce cans apple pie filling 1 box spice cake mix (18 ounces) 1 1/2 sticks (12 Tablespoons) butter
Preheat oven to 350 degrees F.
Dump the apple pie filling into a 9 by 13 inch baking dish. Stir together. Sprinkle the cake mix over the top of the fruit. Slice the butter into tablespoons and distribute evenly over the surface of the cake mix.
Bake until the tops are brown and bubbly, 45 minutes to 1 hour. Serve with whipped cream.

Angel Food Dump Cake (October 2015) 1 box of angel food cake mix 1 20oz can crushed pineapple Combine the contents of the cake mix with the crushed pineapple in its own juice. Just stir in with a spoon. Pour in greased 9 by 13 pan and bake at 350 for 30 minutes.
